Custodian Farmers are a special category of growers committed to the conservation and protection of local food and agricultural genetic resources that are at risk of extinction or genetic erosion.
With the Fuori di Taste event “I Coltivatori Custodi,” Cibrèo aims to celebrate those who work every day to safeguard genetic resources. It is a journey into rural tradition through the experiences of farmers who protect and preserve agri-food species and recipes on the brink of disappearance.
To bring this event to life, we sought out those who, with dedication and care, protect and defend biodiversity, and we chose to celebrate them with an extraordinary dinner created using lost or endangered species. The evening also opened a light yet meaningful discussion on the importance of raw ingredients and food heritage.

- Dario Nardella, Member of the European Parliament and full member of the Committee on Agriculture and Rural Development – AGRI
- Quintosapore, a biomimetic agricultural company from Città di Castello
- Poggio ai Santi, a “custodian” farm located on the Tuscan coast
- Nancy Silverton, renowned American chef, baker, and author
- And many other key figures and “custodians” of lost species
With contributions by Alessandro Giuggioli, farmer-actor, and a poetry reading from the works of Franco Arminio
