Saturday, June 6 at Circo-lo Teatro del Sale brings a special evening centered around food, education, and imagination.
A journey into food supply chains, through everyday choices, sustainability, and simple yet essential questions: what are we really eating? And where does the food we bring to our tables actually come from?

Inspired by our Orto Volante (“Flying Vegetable Garden”), the project dedicated to the producers and culinary excellences featured every Saturday at SALE, our chefs have created a menu that draws beauty and flavor from the very best the earth has to offer at the beginning of summer.
A menu with a strong vegetarian inspiration, giving ample space to vegetables while pairing them with iconic dishes scented by the sea that Fabio loved so deeply.

Following dinner, the evening concludes with the performance “ALL YOU CAN EAT”, a theatrical reading inspired by “The Omnivore’s Dilemma” by Michael Pollan, created by the Teatro dell’Elce and directed by Marco Di Costanzo.

At the heart of the performance is a reflection on the growing loss of awareness regarding the origins of the food we bring to our tables every day. Through a “circular” narrative structure, the audience is guided along three parallel food supply chains — industrial, certified organic, and small local producers — in a journey that connects the everyday act of eating with the broader issues of environmental and social sustainability, offering a lucid and prejudice-free perspective on our contemporary food choices.

But that’s not all…

The evening of Saturday, June 6 also opens with the presentation of a particularly meaningful and special project involving the Scuola-Città Pestalozzi, a renowned experimental and multidisciplinary educational institution and a true point of reference for the neighborhood.

The school, participating in the festival with a series of drawings created by the children and used for the evening’s placemats and menus, is part of a broader initiative born from the collaboration between Cibrèo, Publiacqua, and several local organizations. The project is dedicated to food education and to discovering food as a tool for knowledge, relationships, and personal growth.

This initiative will accompany Scuola-Città Pestalozzi through a journey that will continue until its culmination during the 2027 edition of SALE, involving students, teachers, and leading figures connected to agriculture, cultivation, and gastronomic culture through activities, meetings, and discussions that will also take place at Teatro del Sale together with our chefs and industry professionals.

A shared path born from the longstanding collaboration between Teatro del Sale and Scuola-Città Pestalozzi, now further enriched by the partnership with Libreria Malaparte, within a common vision that places imagination, language, and children’s ability to interpret the world through food at its very center.

An evening to remind us that educating about food also means educating about relationships, sustainability, and caring for the world we share — and that the very first step begins with the imagination and perspective of children.
