Thursday 29 May: FOOD AS A UNION of the community An event that has always been thought of as a glue of stories and people who come from different places or cultures, but who discover that there are more things that unite them than those that divide them. A union of feelings, understood as a 360° experience of feeling, which finds in food and art a universal language, among the easiest to understand and share. 9:30 am – 4:00 pm «LET'S GIVE VALUE TO FOOD» A workshop for citizens on the good use of food and the reduction of food waste. Workshops, readings and laboratories by Cipes Toscana, which has been committed to spreading culture and practices related to sustainability and the reduction of food waste since 2014.

8:00 pm: Event dinner «SO FAR, SO CLOSE» - TdS-style dinner with special food belonging to the gastronomic culture of the two guest communities, Georgian and Senegalese. During the dinner, you can also watch the performance of Badara Seck, a famous Senegalese musician, singer, composer, author, actor and griot, and a Georgian folk singing and dancing group, the «Nanila», who will perform together with the well-known Georgian choreographer Rita Simsive, active in the Florentine area. On this occasion, the Senegalese Community will also deliver a commemorative plaque dedicated to Fabio Picchi. It will be possible to attend also the exhibition on the study of toponymy carried out by the children of the Pestalozzi City School who will deliver to Mayor Funaro a letter, written by them, to invite her to name some streets of Florence after important women from recent and past history.

Friday 30 May: FOOD AS EMOTION and collective inspiration Since the first edition, Friday evening has been dedicated to Fabio Picchi. This year the event will have a very special and emotional flavour and is dedicated to that whole world of inspirations that belonged to Fabio before becoming “il Picchi”. 45 years after the foundation of Cibrèo, a constellation of very special chefs will retrace the history and family tree of the cuisine that inspired its founder.

8:00 PM: Event dinner «FABIO'S TREE: The genealogy of the Chefs who inspired Fabio Picchi's cuisine» Chefs will participate such as Benedetta Vitali, founder with Fabio of the Cibrèo restaurant, Anna Bini, Deanna Vanni, Eliana De Magistris and many other chefs and cuisines of inspiration such as that of Luciano Casini, as well as Oscar Severini, alongside Fabio in the kitchen for over ten years, his right-hand man and current Executive Chef of the Cibrèo Group.

Around 10:30 PM The show will follow with Poetic-Theatrical Readings by Teresa Tanini: «READINGS IN THE PANTRY»: Memories, anecdotes and extracts from Picchi's cupboard! During the dinner, speeches by the magazine «L’INTEGRALE» will be attended by:

  • Diletta Sereni, Director of L’Integrale
  • Jacopo Melilli, Chef and Writer who will present the very emotional and very special story of a Chef’s journey in the kitchen
  • Giulio Picchi, Restaurateur, Host, Illustrator and Co-Owner of the Cibrèo Group..

Saturday 31 May: FOOD AS A CURE and conscious choice Saturday generally develops the annual theme of the Festival by exploring its relationship with raw materials or cooking in the strictest sense. This year, also thanks to an important anniversary that ended in 2024, Teatro del Sale and Cibrèo are dedicating the entire day to sustainability, a very current topic of which Fabio Picchi has been a pioneering spokesperson since 1979.

From 10:00 to 17:00 «THE FLYING GARDEN»: A day dedicated to sustainability. Stand-workshops will be set up with important producers who have made sustainability, biodiversity and organic a real success. The following will participate with demonstrations: School of Agriculture – UNIFI Fattoria Triboli L’Ortobioattivo di Andrea Battiata Quinto Sapore Filo&Fibra Cooperativa di Comunità Trebbio Bucolica La Marzocco and Accademia del Caffè Espresso

8:00 pm: Event dinner «CIBRÈO IN THE FARM» With a view to the day dedicated to the culture of sustainability, Teatro del Sale offers a dinner inspired by the key products of the companies present with their workshops and the culture of sustainable food that has always inspired the philosophy of Cibrèo cuisine. In addition, a theatrical show with: ASSOCIAZIONE SIPARIO Onlus and the ARTHUR MURREY Dance School in the show «FANTASY», a unique show, where the world of fairy tales comes to life through dance. You will see characters such as Pippi Longstocking and Beauty and the Beast perform, dancing to the notes of exciting dances such as the dreamy waltz or the overwhelming merengue!

Sunday 1st June: FOOD AS SHARING with the community and for the community The grand finale of SALE is always a collective celebration designed for everyone, absolutely everyone: neighborhood, city and citizens, partners and professionals, no one excluded. Indeed, this is precisely the spirit with which Sunday's event was conceived: a society that creates nourishment and celebrates the beauty of its collective activities, in fact, cannot be considered as such if even a single subject remains outside of that nourishment or its celebration.

From 7:00 PM «SANT’AMBROGIO AT TABLE» The great charity dinner for the philanthropic associations of Florence, which for two years now has been seating over 500 people at the table for free and which transforms into a great collective party with music and DJ Set. Among the charities involved we find Montedomini, Coop Gaetano Barberi, Opera della Madoninna del Grappa, I Ragazzi di Sipario, Nosotras, Coop Il Girasole, Ente Nazionale Sordi - ETS APS and others. This year the Michelin-starred Chefs will be the protagonists who will create the great dinner in Piazza dei Ciompi, but they will not be the only ones. In addition to the Cibrèo Restaurant, the following restaurants will be participating: Enoteca Pinchiorri with the presence of Giorgio Pinchiorri Irene L’Imbuto (Lucca) Saporium Arnolfo Le Jardin

A great surprise -and very special guest- the well-known content creator WikiPedro who, as a true Florentine DOC, could not miss the great final party of SALE with his interviews and curiosities. Furthermore, this year too, there will be a coffee station curated by the Accademia del Caffè Espresso and the extraordinary Pasticceria Nencioni which will end the dinner on a sweet note thanks to the hundreds and hundreds of cream puffs of all flavors that will be offered to the guests of the event.

From 10:00 PM «IL BALLO DEL SALE» Piazza Dei Ciompi will become the real meeting place with a collective party of the city and the neighborhood. A musical show to close the festival open to all and with the contribution of Sammontana. There will be: The Sammontana playground with the ice cream cart Live Music with one of the most interesting bands on the national scene, the «BALUBA SHAKE» The DJ Set Live by DJ Hugolini and Ghiaccioli & Branzini. Candy floss, gadgets and much more to have fun together. There will also be the Popcorn cart by Generali Firenze Rifredi, which has always been attentive to social responsibility and the Florentine territory, will also pay homage to children with biodegradable balloons.

But there are still many, many consents for the activities that will be promoted in the neighborhood and the participation of the shops that have already joined last year, many even those that are confirmed for the third consecutive year to demonstrate not only the effectiveness and goodness of the project, but also the enthusiastic force that it is capable of arousing.
